Pizza with Pizazz!
Salsa Pizza

1 prebaked 12-inch pizza crust
1 cup shredded cheese, divided (monterey jack, mozzarella, pizza or Italian cheese, or a combination)
3/4 cup salsa, chunky variety preferred
2 tablespoons minced fresh cilantro
Directions:
Remember to wash your hands!
- Preheat oven to 425°F. Place crust on an ungreased baking sheet or pizza pan.
- In a small bowl, combine 1/2 cup cheese, salsa, and cilantro.
- Spread salsa mixture over crust to within 1/2 inch of edge; sprinkle with remaining cheese.
- Bake 12 to 13 minutes or until cheese is melted. Cut into 8 wedges.
Black Bean Nacho Pizza

Makes 2 pizzas
2 flat breads or tortillas
1 cup black beans, drained and rinsed
½ cup chopped roasted red peppers
1 teaspoon chopped garlic
1 teaspoon chili powder
¼ teaspoon salt
½ cup shredded Monterey Jack cheese
¼ cup chopped plum tomatoes
¼ cup chopped green onions
¼ cups sliced black olives
2 jalapeno peppers, chopped

- Preheat oven to 425 degrees F.
- Place flat bread or tortillas on a baking sheet. Bake for about 10 minutes or until edges start to brown. Remove from oven and set aside.
- In a food processor, combine black beans, red peppers, garlic, chili powder, and salt. Blend until a paste is formed.
- Spread ½ of the bean paste on each crust.
- Top each pizza with ½ of the remaining ingredients.
- Return pizzas to the oven and bake for about 10 minutes or until cheese melts.
- Remove from oven, cut into 4 pieces and serve immediately.

Crust:
1 cup warm water (105° - 115°F)
1 package active dry yeast
2 cups whole wheat flour
1/2 to 1 cup all purpose flour
1 teaspoon salt
2 tablespoons canola oil
Suggested Toppings:
1 8-oz. can tomato sauce, no salt added
1 tablespoon pizza seasoning
1/4 cup turkey pepperoni slices
1 cup sliced green bell peppers
1 cup sliced sweet red pepper
1 cup sliced fresh mushrooms
1 cup sliced fresh asparagus
2 cups shredded pizza cheese

Remember to wash your hands!
- Dissolve yeast in warm water; let set for 5 minutes.
- Combine whole wheat flour and salt. Add yeast mixture and oil. Stir to combine. Gradually add all purpose flour and knead for 3 to 5 minutes or until it becomes a soft dough.
- Cover dough and let rest 10 minutes.
- Roll dough into a 14-inch circle and place on a greased pizza pan dusted with cornmeal. Prick dough with a fork to prevent bubbles during baking.
- Spread dough with tomato sauce and sprinkle with pizza seasoning.
- Top with pepperoni, onion, green and red peppers, mushrooms, asparagus and cheese.
- Bake on the bottom rack of a preheated 425°F oven for 20-30 minutes or until crust is golden brown and cheese is melted and lightly browned.
- With a pizza cutter, cut pizza into 8 slices. Serve immediately.
